A lot of people have strong opinions about beets – they either love them or hate them.

You may think you don’t like beets, but maybe you’ve just never had them prepared in the right way.

EvergreenHealth nutritionist Tina Begg says that it takes people about 10 times tasting a new food before they accept in into their diet. So it’s worth trying beets a few times to see if you like them.

Fresh beets are nothing like the pickled ones in a jar. Many beet lovers swear by roasting them as opposed to boiling. Others use them to add sweetness to baked goods while infusing those goods with some added nutrition.

Beets pack nutrition

Beets are low in calories – only 58 calories per cup of raw beets. That cup contains:

  • 11% of your daily vitamin C
  • 13% of your potassium
  • 37% of your folate
  • 4 grams of fiber

The levels of those nutrients are even higher in the beet tops, which can be eaten like any other cooked greens.

Beets come in a variety of colors – from white to red to many shades in between. And like many brightly colored foods, beets are a good source of antioxidants.
