Avocado Pudding

By Danette Wickman, RDN, CD
Avocado pudding can be a great option when you have some extra avocados you don't know what to do with or you want a healthy dessert that tastes delicious! Avocados are an excellent source of magnesium, potassium, vitamin C, Vitamin E and Vitamin K.
If you're carb counting, most of the carbohydrates in the avocado come from fiber; there is very little sugar. Most of the calories in avocados or in this case, the pudding, comes from monounsaturated fat. Monounsaturated fats come from plant sources and may be helpful in lowering your LDL or bad cholesterol!
Ingredients
- 4 ripe avocados
- 1/4 cup coconut milk, light
- 3 tbsp honey
- 1 tbsp vanilla
- 4 tbsp cocoa powder
