Smoked Salmon and Veggie Wraps

Sunflower seeds are rich in vitamin E, an antioxidant that may help reduce exercise-induced muscle damage. The complex carbs of whole grains help replenish glycogen. Smoked salmon contains heart-healthy omega-3s as well as sodium, one of the electrolytes you need to replenish following a race. Athletes need around 2,000 mg of sodium per day regularly, so you may want to make lower-sodium choices for the remainder of the day.

Ingredients

  • 1/2 cup reduced-fat cream cheese
  • 2 tablespoons chopped dill/li>
  • 2 tablespoons chopped chives/li>
  • 1/4 teaspoon black pepper/li>
  • 4 whole-grain tortillas/li>
  • 8 ounces smoked salmon/li>
  • 2 tablespoons capers/li>
  • 3 tablespoons sunflower seeds/li>
  • 1 cup artichoke hearts, sliced/li>
  • 2 cups baby spinach/li>

Directions

Mix cream cheese, herbs, and pepper. Spread on wraps. Divide salmon, capers, sunflower seeds, artichokes, and spinach among the wraps. Roll, slice, and serve.

Makes 4 servings, with 336 calories, 15 g fat, 8 g fiber, and 1,820 mg sodium.
